First of all, we want to introduce what is meant by "brewing" coffee. Boil-Put things in water and bring the water to a boil. But the "boiling" of brewing coffee is a process of "washing out" the flavor in the coffee with water of 92-96 degrees. So many people will misunderstand this word. If you really put coffee in water to "boil", the drink you get will no longer be a cup of coffee, but a cup of bitter water (because the temperature in the water has reached 96 degrees at this time), 96 degrees The above temperature can destroy the oil in the coffee, and the taste is pungent and astringent.

There are several points to note when making coffee at home:

1. The degree of coffee grinding is determined by the coffee machine you choose. Because different coffee-making methods require different grinding powder thicknesses

2. Use 92-96 degree water.

3. Different preparation methods require different cooking times

Use a small home coffee machine-the coffee must pass through a filter paper or a gold filter Filter Coffee

1. Use of small funnel: Put a piece of filter paper inside the funnel, and put a cup (8-10) of coffee powder into the filter paper pocket. (Avoid coffee entering the interlayer between the filter paper and the funnel wall) First, moisten the coffee powder with water of appropriate temperature, and then add water later (the water should be added slowly to avoid the coffee grounds being flushed into the coffee by the water level higher than the edge of the filter paper). A perfect cup of coffee.

2. Electric drip coffee machine: preheat the coffee machine before brewing coffee every day, add half a pot of water in the sink, and turn on the power; first, top out the stale water in the machine; second, clean the boiler and The pipes of the brewing system, third, cleaning the coffee brewing funnel, and fourth, preheating the coffee pot. Place a matching filter paper in the hopper of the coffee machine, and put 7-9 grams of coffee powder per cup into the filter paper (be careful that the coffee powder enters the interlayer between the filter paper and the hopper wall), and close the hopper door. Add 175 ml per cup to the sink and turn on the power.

The thickness of coffee powder: through filter paper or pot filter: medium

Coffee maker (also called tea maker or squeeze pot) French Press Coffee

This is a traditional immersion method. Coffee powder and brewed coffee liquid are in the same container. This method can taste the advantages and disadvantages of coffee.

Method: Put the coffee powder that matches the thickness of the squeezing pot into the pot in the amount of one cup (80 grams), but it cannot exceed the limit of the coffee pot. Pour 91-96 degrees Celsius water into the pot until the top of the metal frame outside the coffee pot, place the filter rod, soak for 3 minutes, push the filter to the bottom, and a pot of delicious coffee is ready.

Avoid problems:

First, the choice of coffee pot: According to the current coffee culture atmosphere is slowly developing, the coffee brewing equipment market is not very sound. When buying, you must pay attention to the thickness of the coffee pot glass. The cup barrel is vertical and the diameter is the same. The metal frame should be strong and hard.

Second, the water temperature: Too high water temperature will deteriorate the oil quality of the coffee and make the coffee bitter. If the water temperature is too low, the coffee will taste sour and astringent. So the normal water temperature is 91-96 degrees Celsius.

Third, the thickness of coffee powder grinding: This is an immersion brewing method, it needs to soak for 3 minutes, so the coffee powder should be coarse.

Fourth, downward pressure: This action needs to be done carefully. Press the lever with the palm of your hand, and press it vertically and downwardly at the bottom of the pot in a straight line. Remember to apply evenly, too much force will burst the coffee pot. Fifth, the coffee powder can not be brewed a second time: the standard first brewing, brewing delicious coffee, the second time is bad water. Any kind of coffee brewing is to wash out the taste (organic and inorganic substances that can dissolve and be insoluble in water) in the coffee with water for the second time and no longer taste.

The thickness of coffee powder: coarse.

Basically, add the coffee to the top of the marinated cup, but lightly compact it. There should be a certain gap at the top of the brine cup because the coffee will expand after being soaked in water. Boil over medium heat until you hear the water in the pot. Remove the pot and make coffee.

The thickness of the coffee powder: Italian-style home fragrant coffee: medium to fine.

Italian Espresso, made with machine Italian Espresso

Add seven grams of coffee to the brine cup and lightly compact it. There should be a certain gap at the top because the coffee will expand after being soaked in water. Add water and observe the color of the coffee oil (Crema) after it comes out of the coffee machine. When the coffee oil starts to turn from golden brown to white, stop adding water. The whole process takes 22 to 28 seconds. Remember that real aromatic coffee is a very small cup of coffee (40-50 milliliters or 1.5 ounces). The coffee should start to flow after five seconds. It should flow like hot honey at the bottom of the coffee spoon. If it takes too long to start flowing out, try not to press the coffee too hard, or use coarser grains instead. If the coffee flows out too quickly, compact it a bit more, or use finer particles instead.

The thickness of the coffee powder: Italian aromatic coffee: fine.

Italian milk foam coffee Cappuccino

The spirit of Italian milk foam coffee comes from Italian aromatic coffee. When the aromatic coffee is done, the milk foam coffee will also taste good. If the aromatic coffee is not made to the standard, the milk foam coffee will also be affected. The brewed milk froth coffee is divided into three steps.

The first step is to prepare Italian aromatic coffee according to the above method. Aromatic coffee should account for one-third of this beverage (not one-third of the cup because an unreasonable cup has an unreasonable capacity).

The second step is to add one-third of the hot milk (its amount should be the same as the amount of aromatic coffee).

The third step is to add another third of the milk froth.

The thickness of the coffee powder: instead of powder, use the already made fragrant coffee directly.

Turkish Coffee Turkish Coffee is perhaps the most difficult coffee to make. Real Turkish coffee can only be obtained through complicated procedures. Each cup of coffee requires two tablespoons of coffee and one spoon of sugar (if needed). (You should use a small cup to drink Turkish coffee). Add coffee and sugar to the Turkish coffee pot "Ibrik" (Jeeva). The coffee pot can only be filled halfway because when the water is about to boil, it will produce a lot of foam. When the coffee is boiling, remove the coffee pot from the fire to make the foam disappear. Repeat the above procedure twice, and then slowly add coffee to the small cup. If you do it carefully, most of the coffee particles should stay in the coffee pot. A true connoisseur of Turkish coffee can add a little foam to each customer’s cup, but this can also be done with a spoon.

Do you know that two-thirds of coffee drinkers drink Turkish coffee (or Greek coffee, depending on where you come from)?

The thickness of coffee powder: super fine.

Legend has it that one day when "Muhammad" was about to be conquered by sleep works, his archangel "Gabriel" immediately offered a cup of brewed coffee. The strong coffee aroma greatly invigorated "Muhammad" and made him -Surrendered forty warriors and made forty women happy-It is not explained in this story how "Gabriel" made this magical drink but based on the experience of centuries when brewing coffee- The temperature and pressure of water, the contact time of coffee powder and water are important factors that affect the quality of coffee.

Coffee making methods: Coffee brewing methods are generally classified into the following types-

Evelin brewing method (Turkish Lbrik Coffee):

This is a concentrated, highly concentrated coffee with a little aroma. Production method-heat the copper coffee pot, put an appropriate amount (one teaspoon per cup) in the pot, grind very fine coffee powder and sugar, and brew it with boiling water. The total contact time is about 1 minute, and the pressure is 1 atmosphere.

There are two ways to drink this coffee:

1. Start drinking while the insoluble part is still suspended on the surface.

2. Wait for it to settle before drinking.

Filter Coffee:

1.5 ounces of lightly roasted, coarsely ground coffee powder is put into the filter paper, and boiling water is slowly poured into the center of the coffee and around, and then back to the center from the surrounding area. The ground coffee powder after the boiling water is dripped into the pot, each cup Use about 8-10 grams of water. The boiling water temperature is 100°C.

Mocha:

It is a type of distillation. The coffee brewed in a Mocha pot has a calm concentration and aroma. The Moka pot is divided into upper and lower parts. The water is boiled in the lower half of the pot until it boils. When the water is boiled, the boiling water rises through the filter with coffee powder to the upper half of the pot under the pressure of the steam. When the coffee starts to flow to the upper half of the pot, the fire needs to be turned down, because too high a temperature will cause the coffee to burn and destroy its original flavor. The common Japanese-style Kaifeng cooking method also uses the same principle.

Napoletana:

It is a type of filter coffee. Put moderately ground coffee powder (5~6g/cup) into the filter in the Napoletana pot, cover the lid of the filter, and put it in the boiler. After the water boils, remove the pot and turn it upside down. The coffee powder in the boiling water filter at 100°C drips into the cup (as shown in the picture). The contact time between the boiling water and the coffee powder is between 2 to 4 minutes. Napoletana coffee is not very thick, but it is full and round.

Espresso Italian machine brewing style:

Coffee is an extremely unstable liquid and may change its characteristics all at once. This is one of the reasons why the Espresso Machine was invented. The espresso machine can draw several cups of coffee continuously. The high pressure in the brewing process can emulsify and dissolve the oil and gum in the coffee beans, and the essence in the beans is completely extracted by pressure, making the brewed coffee stronger, taste and aroma better.

Siphon (Siphon ):

First teach the coffee powder to put into the upper funnel, then add water into the pot, then put the funnel mouth tightly into the spout, and boil the water. When the boiling water rises into the funnel, stir and soak for about 40 seconds to one minute. Then turn off the alcohol lamp. At this time, when the coffee drops back into the pot, you can remove the funnel and pour it out for drinking.

Coffee lovers know that buying good coffee is only the first step to making good coffee. The correct storage, grinding, and brewing of coffee can ensure the quality of coffee.

Pay attention to the following points when brewing coffee-

Boiling will make the coffee bitter, so never boil the coffee. The proper brewing degree should preferably be slightly below 96°C.

Coffee cannot be reheated. When brewing, you should pay attention to only the required amount each time, and it is best to drink it just after it is brewed. The best drinking temperature for coffee is 85°C.

Water accounts for 98% of a cup of coffee, so it is best to use filtered water to brew coffee, especially water containing chlorine.

Don't reuse coffee grounds anymore, the brewed coffee grounds only leave an unpleasant bitter taste.

According to the coffee machine used, make the correct coffee grind. A too fine grind will make the coffee more bitter, and it is also easier to block the coffee machine. If the grind is too rough, the brewed coffee has no taste. In terms of the filter brewing method, the dripping time of properly ground coffee powder should be 2~4 minutes each time

Recommended dosage-2 tablespoons of ground coffee / 6 ounces of water
